Gosh, it's difficult to believe we are already half way through October! The kids are on half term holiday from school this week and we are planning on making the most of the last holiday before the Christmas festivities kick in (oops... yes... I did say the 'C' word).
With this week's focus being on family fun and exploring the outdoors before the weather turns, I didn't want to plan evening meals which require a lot of preparation and cooking, so I turned to my trusty freezer for some easy meals.
So, here we go!
Chicken stir fry
We had a stir fry for our evening meal last Monday and it worked out really well for us. As Monday's are BUSY evenings for us, we wanted to make life as easy as possible for us this week and decided to go with a stir fry this Monday too. With chicken in the freezer, we opted for a chicken stir fry this week.
Soup and sandwiches
This is becoming our regular Tuesday night dinner. It works really well with the commitments we have on this night, plus it's really easy to make a big batch of soup at the start of the month and freeze batches to use for the remainder of the month. This week we'll be having potato and leek soup and using up the last of the frozen portions in the freezer.
Because who doesn't like spaghetti meatballs. Right? With a pack of meatballs in the freezer, this will be a quick and simple mid-week meal for us.
I made a double batch of sausage casserole when it was on our meal plan at the start of the month, so it's time to take that extra batch out of the freezer and use it up this week.
This was another meal I made extra portions to freeze when it was on our meal plan at the start of the month, so this will be getting whipped out of our freezer for a quick Friday night meal.
Hurray! No need to think up a meal for tonight!
