Gosh, it's difficult to believe we are already half way through October!  The kids are on half term holiday from school this week and we are planning on making the most of the last holiday before the Christmas festivities kick in (oops... yes... I did say the 'C' word).

With this week's focus being on family fun and exploring the outdoors before the weather turns, I didn't want to plan evening meals which require a lot of preparation and cooking, so I turned to my trusty freezer for some easy meals.

So, here we go!

Chicken stir fry
We had a stir fry for our evening meal last Monday and it worked out really well for us.  As Monday's are BUSY evenings for us, we wanted to make life as easy as possible for us this week and decided to go with a stir fry this Monday too.  With chicken in the freezer, we opted for a chicken stir fry this week.

Soup and sandwiches
This is becoming our regular Tuesday night dinner.  It works really well with the commitments we have on this night, plus it's really easy to make a big batch of soup at the start of the month and freeze batches to use for the remainder of the month. This week we'll be having potato and leek soup and using up the last of the frozen portions in the freezer.

Spaghetti meatballs
Because who doesn't like spaghetti meatballs. Right?  With a pack of meatballs in the freezer, this will be a quick and simple mid-week meal for us.

Sausage casserole
I made a double batch of sausage casserole when it was on our meal plan at the start of the month, so it's time to take that extra batch out of the freezer and use it up this week.

Cottage pie
This was another meal I made extra portions to freeze when it was on our meal plan at the start of the month, so this will be getting whipped out of our freezer for a quick Friday night meal.

Hurray!  No need to think up a meal  for tonight!

Chicken fajitas

If you are interested in seeing the grocery haul I did for this week's meal plan you can find it on the Frugal Wife YouTube channel, or here: Weekly meal plan and grocery haul.  This week's food shop was from Lidl, with a couple of items from Morrison's.

P.S. I'm linking up with a bunch of other lovely bloggers for lots of meal planning & recipes inspiration.

  1. Nice to see a real family shopping haul, rather than the usual super clean eating or meals using ingredients I am far too stingy to pay for!

  2. We're having a Chicken stir fry tonight too! I can't wait for it. Fab meal plan. You have a lot of my favourite meals x

  3. We are not on half term until next week and I cannot wait. Working in a school means I have a week off too with the kids! Delicious meal plan and thank you for sharing with #MealPlanningMonday x

  4. I look a good shopping haul! I have finally convinced my other half that meal planning is a good thing and he's on board for next week, should have some interesting results to see what the budget looks like, as he doesn't always like to eat as early as me and my 14mo daughter. And also, can I just say, your handwriting is so neat!
