October is the month of becoming organised and focused... oh yes indeedy!...and this is the beginning of documenting my meal plans and grocery shops, not only on YouTube, but on this here blog.
This week's meal plan is tasty, simple and budget friendly; an ongoing theme whilst we continue with our journey to becoming debt free.

Sausage casserole with mashed potatoes
I use a similar recipe to Skint Dad's budget sausage casserole and I suspect this will become a regular in our meal plans over the Winter months.
Soup and sandwiches
My plan is to make a huge batch of carrot and ginger soup so I have a few portions stocked up in the freezer for the coming weeks. Admittedly, I doubt the kids will be as eager for this as me, but that's what for tomato soup and chicken soup are there for.
Cottage pie with carrots & peas
Our cottage pie recipe is similar to Skint Dad's recipe, although we use red lentils, rather than baked beans to bulk out the dish (which comes in handy for making extra freezer portions).
KFC "fakeaway" night for the kiddos; leftovers for the grown ups
Carbonara pasta, garlic bread, bruschetta and side salad
Roast beef dinner, mashed potatoes, yorkshire puddings, carrots & peas
Yep, like I said, we're keeping things nice & simple. I also plan on cooking up double batches so we have some meals and in the freezer ready for later in the month.
